QUICHE PIE using Collard Greens, Bacon, Eggs, Onions, and Cheese! Yum, Yum.

Quiche Pie! Let’s make three! What will you need,?

  1. Three Deep Dish Pie Shells.
  2. 12-15 Large Eggs.
  3. One Big Bag Shredded Cheddar Cheese.
  4. One to Two Lbs of Bacon.
  5. 1/3 Cup Sugar
  6. One Large Sweet Onion.
  7. One Lb of Collar Greens.

Now place your thawed and forked Pie Shells in a 350 degree Oven for 10-15 Minutes. I always precook them to make sure the pie shell is fully cooked in the end.

While it is cooking. Fry up all the Bacon until good and crispy.

Then cook Collard Greens to a more pliable texture.

Dice the entire Onion.

Break and dump your eggs into a large Mixing Bowl..


Put your Bacon and Eggs and Onions and Sugar in your Big Mixing Bowl and Mix with your Mixer.

Drain your Collard Greens. Put damp Collard Greens in your Mixing Bowl.

Add the Seasoning you want-Garlic, Black Pepper, Jalapenos, Black Beans, Black Olives pieces, Bell Pepper diced. These are just examples to use. Also. salt if you want.

Add 1-2 Cups of Cheese and mix with seasoning.

Mix all of it one last time. You don’t need to mix very much except for the Eggs. You want them good and mixed.

Now, add 1/3 of your Mixture into each Pie Shell.

place these on a large cookie sheet in case you got your ingredients all the way to the Top of the Pie Shell which I do not recommend. Keep a finger width from the top level of your Pie Shell.

COOK at 350 Degrees for 30-40 Minutes. Check by using a toothpick until no egg is left on your Toothpick.

Let them cool down. Slice and eat. ENJOY! Put other two in a Freezer Bag and put in Freezer for when you want more.

Good for Breakfast, Lunch, or Supper.

Fresh Spinach can be used also if you don’t want to use Collard Greens. Also, I USE Collard Greens or Mixed Greens from the Can when I am in a Hurry and want to cut corners. But fresh Spinach and Collard Greens aren’t always available all year round.

Enjoy! Also, sprinkling Mozzarella Cheese on Top in past 5 minutes of cooking is another Option.

HINT: Cook your Bacon Crispy so it breaks up with the mixer and doesn’t wrap around your Beaters.
